Bendale BTI Students Win Culinary Competition

Schools across the Province submitted their best recipes for the First Annual Royal Winter Fair High School Culinary Chef Competition.  Bendale Business and Technical Institute’s submission was one of three recipes chosen to be entered in the competition which has high school students from across the Province showing off their culinary skills. Students chefs must feature local, in season Ontario produce, demonstrate creativity and culinary prowess but most importantly, it must look, taste and smell delicious. 

Two of the three schools selected to compete in the competition at the Royal Winter Fair were from the Toronto District School Board. Thistletown CI was a valiant competitor but it was Bendale’s Ravioli that had judges’ tongues dancing with delight to reward them with a first place finish. Some of the ingredients used for the winning recipe were picked directly from Bendale’s very own vegetable garden, the Bendale Market Garden.  Throughout the school year, students plant, grow and harvest their own fresh organic vegetables for use at the school and to sell in the local community.

Under the direction of Teacher/Chef Darren Beer, the winning dish created by Bendale students Brooklyn Bouffard, Caroline Fermo, Chase Clark and Emily Shannon was:

  •  Roasted Acorn Squash and Smoked Turkey Ravioli and Spinach and Ricotta Ravioli
  • ·Fresh Tomato Concassé with Shallots and Garlic
  • ·Balsamic Reduction
  • ·Garnish with Rosemary and Butternut Squash Chips

Not only does the winning team have Iron Chef bragging rights, their winning recipe will be published and they will receive kitchen tools.

Congratulations to Chef Darren and the Culinary Team for their Winning Recipe at the Royal Agricultural Winter Fair's Culinary Competition and for making staff and students back at Bendale very proud!
